Not available at Dominos

Kalamata Olives, Red Bell Peppers and chicken . . .  almost as good as:
Fresh cod
A mess of chopped cilantro
Mixed in to a cup of Panko breadcrumbs with a bit of salt, pepper, garlic powder and enough olive oil to wet it down a bit.
Cover the cod liberally with the bread crumb mix and pop it on to a hot non stick pan with some butter
Then in to a 500 deg F oven for about nine minutes
A quick tomato and avocado salad dressed with olive oil, white vinegar, salt pepper and garlic powder.
Behold Baked Cod, the new household favorite.

  1. Mmmm! Now that sounds good, the only thing missing is an ice cold Corona served in a frosted glass.

    1. Some nice Two Buck Chuck Chablis washed it all down on this occasion. Though the cook was helped along by a pint of Genesee ale.

  2. Right this second I'd go for the pizza! It's roast chicken for me tonight though.

    1. Given all the fresh seafood you get in Angola I am not surprised at your choice. Nothing wrong with a roast chicken though. Leftovers from that go on the pizza.

    2. Leftovers from that go in the dog! If I roast a chicken and they don't get their share, they'd mug me on the way back from switching the generator off at night!

    3. What, they don't have Kibbles in Angola?

  3. I haven't eaten a Dominos pizza since the youtube video came out with the kids farting on the pizza and joking about people eating it.

    1. Harry, I can't remember the last time I ate store bought pizza but must be well over 15 years. I see no sense in paying 15 bucks for a soggy piece of cardboard dripping oil slathered with cheap tomato sauce and faux cheese.

  4. Every thing looks so good. I discovered the pankoo not long ago and find it more tasty that regular bread crumbs.

    1. Yes Yael, the Panko crumbs crisp up a lot better as well.

    1. Kev, it is really easy and a good way to use up left overs and odds and ends in the fridge.
